These proceedings contain the 27 papers presented in the workshop, held within the framework of COST Concerted Action 94, related to the different aspects of processes that affects the quality of produce, held in Leuven, Belgium, September 14-15, 1993. The topics cover storage and handling systems, sensors and models in post-harvest operations. Extract of contents: quality measurement techniques; kinetics of respiration and quality change; systems for quality maintenance during loading, transportation and storage. Some of the papers will be abstracted in the IIR Bulletin.
