Summary
This paper explored the effects of precooling, transportation and distribution methods on tomato quality and established an optimum circulation method. The results showed that the respiration rate of the precooled tomatoes decreased from 69.94 mg CO2·kg-1·h-1 to 25.02 mg CO2·kg-1·h-1, and the ethylene release rate decreased from 0.385 μL·kg-1·h-1 to 0.301 μL·kg-1·h-1. The tomato quality after forced-air precooling, 2-day 0 °C transportation with anti-fog film and 1-day distribution with semiconductor refrigeration box was best, with the lowest weight and nutrition loss. The sensory evaluation and weight loss after that circulation were 8.2 and 0.19 %, respectively, while the retention rates of total soluble solids (TSS) and vitamin C (VC) were 94.19 % and 86.57 %, respectively. Thus, the optimal cold chain method for tomatoes is forced-air precooling, 0 °C transportation with anti-fog film and distribution with semiconductor refrigeration box.
